Health Benefits

Despite their small size, raisins come with many health benefits. They are packed with energy and filled with fiber, vitamins, and minerals. Even though raisins consume a lot of natural sugars, they can aid in digestion, boost iron levels, and keep your bones strong. Oatmeal Raisin Cookies

Yes, you you are eating a cookie but you are also adding some nutritious ingredients. This recipe can be ready in just 26 minutes, making 36 moist and chewy cookies!

Ingredients:

Dry Ingredients

  • 2 cups of all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt 

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup dark brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla 

  • 3 cups oats (whole grain)
  • 1 1/2 cups raisins (optional)

Instructions:

  1. Preheat oven to 350°
  2. Whisk dry ingredients, set aside
  3. Combine wet ingredients using a hand mixer on low. To cream, increase speed and beat until fluffy. The color will lighten. 
  4. Stir the flour mixture into the creamed mixture until no flour is visible. But make sure not to over mix, as that will result in a tough cookie.
  5. Lastly, add the oats and raisins; Gently stir.
  6. Shape the cookies into sizes as you wish. I used an ice cream scoop so that all the cookies were the same. 
  7. Place cookies about 2-inches apart on a baking sheet that is sprayed with nonstick spray. 
  8. Bake 11-13 minutes (on center rack) or until golden, but still moist in the middle. 
  9. After removing from oven, let cookies sit for 2 minutes. 
  10. Eat, share, and enjoy!
