Another Matcha favorite coming your way. To add to my obsession, Matcha Pancakes are amazing! These light, fluffy, sweet, and green pancakes are worth a try. This weekend morning brunch is the way to go. (See my Matcha Monday post to read about the benefits of Matcha Green Tea powder.)
Matcha Green Tea Pancakes
A perfect stack to add color on your plate. Super delicious, healthy, and very easy to whip together. This recipe makes 8 servings.
Ingredients:
- 2 eggs
- 2/3 cup milk
- 1/4 cup vegetable oil or melted butter
- 1/4 cup unrefined sugar
- 1 tsp vanilla extract
- 1 cup flour
- 2 tbsp matcha powder
- 1 tips baking powder
- 1/8 tsp kosher salt
Topping Suggestions
Fresh berries, whipped cream, pure maple syrup, nuts, or anything of your choice. I love to top my pancakes with fresh blueberries, raspberries, or strawberries, and whipped cream. My brother thinks I am crazy for not using the traditional maple syrup, instead liking whipped cream on my pancakes, but it adds such a cool, fresh flavor.
Instructions:
- In a large bowl, add egg, milk, vegetable oil (or melted butter), sugar and vanilla extract. Whisk well.
- Next, add the flour, matcha powder, baking powder, and salt. Combine thoroughly until the batter comes together. It should be thick, and very green!
- Heat a pan or cast-iron skillet over moderate heat. Brush with non-stick cooking spray or butter.
- Scoop small amounts of pancake batter onto the skillet. Once bubbles appear and pop on the surface of the pancake, flip and cook on the other side for about another minute.
- Stack the pancakes and serve hot with your desired toppings!
